The Spark of an Idea
Bake Mono Lab started not in a lab, but in a small home kitchen with a single, stubborn sourdough starter named 'Bubbles'. Our founder, a former biochemist with a passion for precision and a love for honest food, became obsessed with the art and science of baking. The mission was simple: create baked goods that were not only delicious but also transparently made with the best possible ingredients.
What began as a weekend hobby, sharing loaves with neighbors and friends, quickly grew. The demand for bread that tasted real, with a crust that crackled and a crumb that was soft and flavourful, was undeniable. This was the sign that our community was craving something more than what the supermarket shelves offered.
Growing with Purpose
In 2020, we took a leap of faith and opened our first small storefront. We called it 'Bake Mono Lab' as a nod to our founder's scientific background and our singular focus on quality. Every recipe was meticulously tested, every ingredient carefully sourced from local farms, and every loaf shaped by hand. We wanted our bakery to be a lab of flavour, experimentation, and pure, simple joy.
